Menu item purchase price is the total purchase price of the stock items needed to prepare these menu items. Purchase price can therefore only be calculated for menu items that belong to the Stock item class. When such a menu item is sold, the associated stock items will be deducted from store upon sales records.
Menu item purchase price depends on a stock item purchase price of the associated stock items. Therefore, the dish purchase price is determined by the total purchase price of stock items used to prepare this dish and the relationship between the volume of these stock items and the output dish.
Menu item purchase price recalculation is carried out using on-hand stock items that have been registered in stores of the selected store group within the selected period. The interval used for recalculation of stock item purchase price is specified in the directory.
The
reports provide menu item purchase prices either by store groups or by menu items. These reports display two different prices:(Price (portion)) - purchase price for one portion of the menu item. This is the total purchase price of stock items required to make one portion of the menu item.
(Price (unit)) - purchase price for one unit of measure of the menu item. This is the total purchase price of stock items required to make one unit of measure of the menu item.
The
