Stock item recalculation is used to edit store documents that have already been processed.

Stock item recalculation enables the user to make changes to two or more processed store documents without changing their statuses.

Modes of recalculation:

The Recalculate mode is used when changes made to recipes in the Stock items directory need to be reflected in the specifications of store documents that have been previously run on the store.

For example, it can be used when you would like to make changes to recipes of compound stock items or to cold preparation or cooking wastages. The mode makes it easy to manage seasonal variations of cold preparation wastages.

Example 7.1. 

Example 1

The sweet pepper stock item should have been added to the recipe of the vegetable salad compound stock item on the 1st of March. However, the necessary changes were made to the Stock items directory only on the 12th of March. Therefore, the sweet pepper stock item was not accounted for in all the store documents which were created from March 1st to 12th and incorporate the sweet pepper stock item.

In order to add the sweet pepper stock item to specifications of these documents, the user should recalculate stock items in the Recalculate mode.


As a result, the sweet pepper stock item will be added to specifications of all the documents.This will allow you to calculate how much sweet pepper was used over the period from the 1st to the 12th of March.

In the Recalculate with conversion ratio and Substitute stock item modes, changes are made only to specifications of store documents. However, no changes are made to the Stock items directory.

The Recalculate with conversion ratio mode is used to change stock item quantities included in store document specifications.

Example 7.2. 

Example 2

For example, our enterprise has launched the Double omelette advertising promotion. This means that instead of using one chicken egg (as specified in the Stock items directory) cooks will use two chicken eggs to prepare the Cheese omelette compound stock item.

This change to the recipe will be valid only until the end of the promotion. Therefore, there is no need to alter the Cheese omelette recipe in the Stock items directory. In order to take into account the increase in the usage of chicken eggs during the promotion, stock items should be recalculated in the Recalculate with conversion ratio mode. The recalculation ratio (2) should be specified.

As a result, the usage quantity of chicken eggs will double in all documents related to the promotion.


The Substitute stock item mode is used when one stock item needs to be substituted for another in store document specifications. A ratio can also be used to enact this change.

Example 7.3. 

Example 3

For example, cooks may use the powdered milk stock item instead of pasteurized whole milk. According to substitute rates, 100 g of pasteurized whole milk can be substituted with 16 g of powdered milk.

In this case the stock items should be recalculated in the Substitute stock item mode. The user should specify the substitute stock item (powdered milk) and the ratio (0.16).

As a result, pasteurized whole milk will be substituted with powdered milk, which makes up 16% of pasteurized whole milk.
