Development is the process of creating a new stock item. Through this process, the stock item’s recipe and method of preparation are developed, and any wastage from cold processing and/or cooking is estimated.

Development operations are used to determine cold preparation and cooking wastage, as well as the quantities of ingredients included in the new dish. Development operations also determine the cost prices of final products.

The results of development are used to add new items to the Menu directory and to the Stock items directory and to create calculation sheets for compound items.

Development operations are documented in development records. The specification of a development record describes the experiments carried out in the course of developing the recipe. For example, to develop a recipe for a new salad, the chef prepared the dish three times. Each of these three attempts is called an experiment. Experiments determine the wastage of the stock items that will result during processing. As a result of the development, you can determine the average quantity of each stock item needed for the recipe.

Before creating a development record, you must enter both the ingredients and the final product into the Stock items directory. Based on the development results, changes are made to stock item attributes (ingredients and their quantities, preparation wastages, and the amount of the final product).

Different statuses can be assigned to a development record depending on what stage the document is in. These statuses are assigned by the user. You can choose from the following options:

  • Not ready,

  • Ready,

  • Registered.

The Deleted status is applied to the development record automatically when it is deleted.

When the development record is created, it receives the status Not ready. When the Ready or Registered status has been applied, the document becomes read-only and can no longer be edited or deleted. The record can be run on the store once the Registered status has been applied. As a rule, after the development record is processed by the storekeeping system, the stock items included in its specification are deducted from the store. Stock items that are included in the specification can be flagged not to be deducted from the store.

The stock items in a development record specification also have statuses. These statuses are assigned automatically when the records are processed by the storekeeping system.

A document specification item can have one of the following statuses:

  • OK – denotes that processing was successful.

  • Not enough on hand in store – occurs if the amount of the stock item specified in a development record is greater than the amount of the same stock item on hand in the store.

  • Cost price loop – the cost price of the stock item cannot be calculated because the stock consumption record links to the stock receipt record, and at the same time, the stock receipt record links to the stock consumption record.
