Windows used to manage cooking wastage types:

All of these windows are opened from the Cooking wastage panel data grid.

The editor window is opened by using the Edit command. In this window, you can edit one or more cooking wastage types.

If one item is selected in the data grid, the Cooking wastage type editor window opens.

Window fields:

  • Stock item is the stock item to which the cooking wastage type applies. This is a required field.

  • Name indicates the name of the cooking wastage type. This is a required field.

    These names are displayed in the Cooking wastage % drop-down list of editor and entry windows.

  • Cooking wastage % denotes the amount by which the quantity changes as a result of cooking. This is a required field.

    The cooking percentage shows what part of the stock item will be lost during cooking of this type. This index is used to calculate how much of the stock item is required to prepare this dish. The quantity modification percentage can be found during preparation experiments or taken from professional reference books.

    For example, the wastage percentage of the Potato stock item after deep-fat frying is 10%. This means that after deep-fat frying 3 kg of potatoes (gross weight), 2.7 kg will be left (net weight).

    If a value greater than 100 is entered in the Cooking wastage % field, an error icon will be displayed to the left of the field. Placing the cursor over the icon opens an error message popup.

  • Default defines this cooking wastage type as the default selection when included into a recipe or storage document. This is a required field.

    You can choose between: No and Yes.

    The Yes option is enabled only for one cooking wastage type.

Click OK to save data. Selecting Cancel will close the window without saving data.

When two or more cooking wastage types are selected, the multiple editor window opens. The name of the editor window changes to Cooking wastage types. A panel with a list of the selected items is added to the editor window.

The fields are similar to those in the Cooking wastage type window.

The New cooking wastage type entry window is opened by using the Add command. From here, you can add a new type to the specification.
