Windows used to manage recipe items:

All of these windows are opened from the Recipe panel data grid.

The editor window is opened by using the Edit command in the context menu. From here, you can edit one or more recipe items.

If one item is selected, the Recipe item window opens. The window is composed of the Properties and Substitutes panels.

The Properties panel is composed of the following fields:

  • Recipe for is the name of the compound item whose recipe contains the selected ingredient. This is a required field.

  • Stock item is the name of the stock item included in the recipe as an ingredient. This is a required field.

    Please select a stock item in the Select stock item window.

  • Gross refers to the gross quantity of the stock item included in the recipe (expressed in the preset unit of measurement). This is a required field.

    It shows the initial quantity of the stock item.

  • Unit (stock item) is the unit of measurement for the stock item. For convenience, the name of this field is not displayed in the window. This is a required field.

    Please select a unit in the Select stock item unit of measurement window. By default, this field contains the value defined for this stock item in the Stock items directory.

  • Cold preparation wastage % denotes the percentage of the stock item quantity modified during cold preparation.

    By default, this field contains the wastage percentage (if applicable) specified for the default cold preparation type.

  • Net is the quantity of the stock item after cold processing (expressed in preset units of measurement). This is a required field.

  • Cooking wastage % denotes the percentage by which the quantity changes as a result of cooking. This is a required field.

    By default, this field contains the wastage percentage (if relevant for this stock item) specified for the default cooking type.

  • Yield is the final net quantity of the stock item after cold preparation and cooking (expressed in preset units of measurement). This is a required field.

  • Order of weights indicates the order in which the ingredient's yield is shown in the Dish weights field on the Recipe panel.

  • Index is the order in which stock items are added during preparation.

  • Recipe mode determines how the ingredient is included in the recipe.

    You can choose between

    • By stock item concurrence,

    • Always with recipe,

    • Manual.

    The default option is By stock item concurrence.

    A recipe mode is determined when the stock item is added to store documents and during recalculation.

    If By stock item concurrence is selected for a stock item of the With recipe class, the stock item concurrence selected for the store defines whether recipe ingredients for the stock item need to be entered into the specification.

    If Always with recipe is selected, compound stock items are entered into the specification along with their ingredients, regardless of whether or not their concurrences require this.

    If the Manual option is selected, the stock item is entered into the specification without its ingredients, even if the concurrence for this store requires them to be entered.

  • Comment is a brief description of the recipe item.

    Any additional information can be entered in this field.

Click OK to save data. Selecting Cancel will close the window without saving data.

When two or more recipe items are selected for editing, the multiple editor window opens. The name of the editor window changes to Recipe items. A panel with a list of the selected items is added to the window.

The fields are similar to those in the Recipe item window.

The entry window is used to enter one or more new recipe items to the recipe.

The New recipe item entry window is opened by the Add command or when pasting one stock item to the recipe from the clipboard.

The New recipe items entry window is used to enter multiple recipe items simultaneously. The window is opens when two or more items are pasted from the clipboard. A panel with a list of the copied recipe items is added to the window; their corresponding compound stock items are specified in brackets.
