The Substitutes panel contains a data grid with a list of stock items that can be used as a substitute for a missing ingredient in a compound stock item or semi-processed item when its sales record is run on store.
Data grid columns:
Substitute refers to the stock item that is used as a substitute for a missing ingredient in a compound stock item recipe.
Unit (stock item) is the unit of measurement for the substitute stock item.
Gross is the quantity of the substitute stock item before cold preparation and cooking.
Cold preparation wastage % denotes the percentage of the substitute stock item quantity modified during cold preparation.
Net indicates the net amount of the substitute stock item after cold preparation.
Cooking wastage % is the percentage by which the substitute stock item is modified during cooking.
Yield indicates the final amount of the substitute stock item after cooking.
Category indicates the stock item category of the specified substitute stock item.
Type is the stock item type of the specified substitute stock item.
Comment is a short comment on the substitute stock item in the recipe.
Index indicates the order of priority of the stock item that is used as a substitute for a missing ingredient of a compound stock item recipe.
Stock item designates the stock item that can be replaced within this recipe.
Stock item group indicates the stock item group to which the substitute stock item belongs.
The specification context menu contains the following commands:
(Ins) – adds a new substitute stock item for the recipe ingredient.
(F2) – edits substitute stock items for recipe ingredients.
command is unavailable if the recipe item substitute specification contains stock item substitutes from the(Del) – deletes substitutes for recipe ingredients.
The command is unavailable if the recipe item substitute specification contains stock item substitutes from the directory.directory to be added sequentially to the substitution panel of the substitute stock item.
– selects stock items from the(Ctrl+P) – generates print layouts.

To add a new recipe item substitute to the substitution specification, use the entry window. To edit substitute stock items, use the and editor windows.
A permanent deletion confirmation prompt appears when you delete substitute stock items.
