Nutritional value panel in the Stock item window

The Nutritional value panel enables you to enter energy values of stock items. This information makes it possible to analyse the nutritional value of stock items.

In the Nutritional value panel, you can specify the contents of fats, proteins and carbohydrates as well as the calorie contents of a specific quantity of the stock item (it is common practice to use 1 portion or 100 g of the stock item). The contents of proteins, fats, and carbohydrates are expressed in grams, while calorie content appears in kilocalories. The display formats for nutritional values of stock items are set in the System settings directory.

The Nutritional value panel is composed of the following fields:

  • Protein indicates the protein content for a specific quantity of the stock item (in grams).

    • Protein per denotes the quantity of the stock item containing the indicated amount of protein.

    • Unit (stock item) is the unit of measurement of the stock item used to calculate the protein content.

      You can select this value in the Select stock item unit of measurement window.

      By default, it is the stock item unit of measurement selected in the Unit (stock item) field of the Properties panel.

  • Fats refers to the fat content for a specific quantity of the stock item (in grams).

    • Fat per denotes the quantity of the stock item containing the indicated amount of fats.

    • Unit (stock item) is the unit of measurement of the stock item used to calculate the fat content.

      You can select this value in the Select stock item unit of measurement window.

      By default, it is the stock item unit of measurement selected in the Unit (stock item) field of the Properties panel.

  • Carbohydrates refers to the carbohydrate content for a specific quantity of the stock item (in grams).

    • Carbohydrate per denotes the quantity of the stock item containing the indicated amount of carbohydrates.

    • Unit (stock item) is the unit of measurement of the stock item used to calculate the carbohydrate content.

      You can select this value in the Select stock item unit of measurement window.

      By default, it is the stock item unit of measurement selected in the Unit (stock item) field of the Properties panel.

  • Calories shows how many calories are contained in a specific quantity of the stock item.

    • Calories per indicates the quantity of the stock item containing this amount of calories.

    • Unit (stock item) is the unit of measurement of the stock item used to determine the calorie content.

      You can select this value in the Select stock item unit of measurement window.

      By default, it is the stock item unit of measurement selected in the Unit (stock item) field of the Properties panel.

If the stock item has a recipe (is part of the With recipe class), the nutritional value section can be automatically filled in using information from its ingredients. The Nutritional value panel has an additional field group named Recalculate.

The protein, fat, carbohydrate, and calorie values are calculated using a percentage ratio.

The Recalculate group is composed of the following fields:

  • Protein is the ratio used to calculate the content of protein in a compound stock item.

    The field enables you to specify a percentage ratio or select either Recalculate or Don't recalculate from the drop-down list. If the Recalculate option is selected, the value 100% is set to the field. The Don't recalculate option sets the Don't recalculate value to the field.

  • Fats refers to the ratio used to calculate the fat content in a compound stock item.

    The field enables you to specify a percentage ratio or select either Recalculate or Don't recalculate from the drop-down list. If the Recalculate option is selected, the value 100% is set to the field. The Don't recalculate option sets the Don't recalculate value to the field.

  • Carbohydrates indicates the ratio used to calculate the carbohydrate content in a compound stock item.
