The Nutritional value panel enables to enter energy values of stock items. This information makes it possible to analyze food and biological value of stock items.
In the Nutritional value panel you can specify the content of fats, proteins and carbohydrates as well as nutritional value of specific volume of the stock item (it is a common practice to use 1 portion
or 100 g
of the stock item). The content of proteins, fats and carbohydrates is expressed in grams, while the nutritional value - in kilocalories. The display format of food and energy value of stock items is set in the
directory.
Figure 4.347. Nutritional value panel of the editor window for stock items without recipes (simple stock items or stock items for butchering)
The Nutritional value panel is composed of the following fields:
Protein – protein content per specific volume of the stock item (in grams).
Protein per – volume of the stock item containing this amount of proteins.
Unit (stock item) – unit of measurement of the stock item to calculate the content of proteins.
Selection is made in the window.
By default, it is the stock item unit of measurement selected in the Unit (stock item) field of the Properties panel.
Fats – fats content per specific volume of the stock item (in grams).
Fat per – volume of the stock item containing this amount of fats.
Unit (stock item) – stock item unit of measurement to calculate the content of fats.
Selection is made in the window.
By default, it is the stock item unit of measurement selected in the Unit (stock item) field of the Properties panel.
Carbohydrates – carbohydrate content per specific volume of the stock item (in grams).
Carbohydrates per – volume of the stock item containing this amount of carbohydrates.
Unit (stock item) – stock item unit of measurement to calculate the content of carbohydrates.
Selection is made in the window.
By default, it is the stock item unit of measurement selected in the Unit (stock item) field of the Properties panel.
Calories – shows how many calories are contained in specific volume of the stock item.
Calories per – volume of the stock item containing this amount of calories.
Unit (stock item) – unit of measurement to express volumes of the stock item.
Selection is made in the window.
By default, it is the stock item unit of measurement selected in the Unit (stock item) field of the Properties panel.
If the stock item has a recipe (class With recipe), the nutritional values section can be automatically filled using information from its ingredients. The Nutritional value panel has an additional field group named Recalculate.
The protein, fat and carbohydrate and calorific values are calculated using a percentage ratio.
The Recalculate group is composed of the following fields:
Protein – coefficient used to calculate the content of protein in a compound stock item.
The field enables to specify a percentage ratio or select either Recalculate or Don't recalculate option from the drop-down menu. If the Recalculate option is selected, 100%
value is set to the field. The Don't recalculate option sets the Don't recalculate value to the field.
Fats – coefficient used to calculate the content of fats in a compound stock item.
The field enables to specify a percentage ratio or select either Recalculate or Don't recalculate option from the drop-down menu. If the Recalculate option is selected, 100%
value is set to the field. The Don't recalculate option sets the Don't recalculate value to the field.
Carbohydrates – coefficient used to calculate the content of carbohydrates in a compound stock item.
The field enables to specify a percentage ratio or select either Recalculate or Don't recalculate option from the drop-down menu. If the Recalculate option is selected, 100%
value is set to the field. The Don't recalculate option sets the Don't recalculate value to the field.
Calories – coefficient used to calculate the nutritional value of a compound stock item.
The field enables to specify a percentage ratio or select either Recalculate or Don't recalculate option from the drop-down menu. If the Recalculate option is selected, 100%
value is set to the field. The Don't recalculate option sets the Don't recalculate value to the field.
