Substitute for recipe item window

Windows used to manage recipe item substitutes:

The editor windows are opened by the Edit command. From here, you can modify attributes of one or more substitute stock items.

The Substitute for recipe item window opens if one substitute stock item is selected in the recipe item substitution specification.

The Properties panel is composed of the following fields:

  • Stock item refers to the compound stock item's recipe item that is automatically replaced with another stock item in the sales record specification when this record is run on store. This is a required field.

  • Substitute designates the stock item used as a substitute for a missing ingredient in the compound stock item recipe in the sales record specification when the record is run on store. This is a required field.

    Please select an item in the Select stock item window.

  • Gross is the quantity of the substitute stock item before cold preparation and cooking. This is a required field.

  • Unit (stock item) is the unit of measurement for the substitute stock item.

    You can select this value in the Select stock item unit of measurement window.

  • Cold preparation wastage % denotes the percentage of the substitute stock item quantity modified during cold preparation.

  • Net indicates the net amount of the substitute stock item after cold preparation.

  • Cooking wastage % is the percentage by which the substitute stock item is modified during cooking.

  • Yield indicates the final amount of the substitute stock item after cooking.

  • Index indicates the order of priority of the stock item that is used as a substitute for a missing ingredient of a compound stock item recipe.

  • Recipe mode determines how the ingredient is included in the recipe.

    You can choose between

    • By stock item concurrence,

    • Always with recipe,

    • Manual.

    The default option is By stock item concurrence.

    A recipe mode is determined when the stock item is added to store documents and during recalculation.

    If By stock item concurrence is selected for a stock item of the With recipe class, the stock item concurrence selected for the store defines whether recipe ingredients for the stock item need to be entered into the specification.

    If Always with recipe is selected, compound stock items are entered into the specification along with their ingredients, regardless of whether or not their concurrences require this.

    If the Manual option is selected, the stock item is entered into the specification without its ingredients, even if the concurrence for this store requires them to be entered.

  • Comment is a short comment on the substitute stock item in the recipe.

Click OK to save data. Selecting Cancel will close the window without saving data.

The Substitutes for recipe item window opens if two or more substitute stock items are selected in the recipe item substitution specification. A panel with a list of substitute stock items is added to the window.

The fields are similar to those in the Substitute for recipe item window.

The entry window is opened by using the Add command or by pasting a substitute stock item from the clipboard. From here, you can add a new stock item to substitute a recipe item.
